Ingredients
  

  • 12 ounces Andouille Sausage sliced
  • 1.5 pounds red potato diced
  • 1 medium sweet onion cut into bit sized pieces
  • 1 medium red bell pepper cut into bit sized pieces
  • 4 tbsp olive oil
  • 1 tbsp dried parsley
  • 1 tbsp dried oregano
  • 1 tsp garlic powder
  • Salt to taste
  • Pepper to taste
  • smoked paprika to taste

Instructions
 

  • Preheat oven to 475 degrees F
  • Combine all ingredients in a large container and toss to coat evenly
  • Spread on a large baking pan in a single layer
  • Bake for 15-20, stir once, then bake for another 15-20 minutes until done
