Orange-Glazed Chicken Wings

Ingredients
- 1 lbs boneless chicken breast cut into 1-inch pieces
- 1/3 cup cornstarch
- 1 egg
- 1/4 tsp salt
- 1/4 tsp pepper
- 3/4 cup honey
- 1/2 cup orange juice
- 1 tbsp ginger fresh, crushed
- 3 tbsp soy sauce
- 1/4 tsp red pepper flakes
- 1 piece lemon grass
- 2 scallions
- Avocado spray oil
Instructions
- Preheat air fryer to 400° F and over to 350° F
- Beat egg in large bowl
- Add chicken to egg and coat well
- Combine cornstarch, salt, and pepper in a separate bowl
- Transfer chicken into cornstarch mixture and coat thoroughly
- Place chicken in the air fryer pan, spray generously with avocado oil and airfry for 12 minutes
- Let chicken cool and transfer to a 9×13 baking dish
- Cut lemongrass lengthwise, transfer to a plastic bag and smash with a rolling pin
- In a saucepan over medium heat combine lemongrass orange juice, honey, ginger, soy sauce, and red pepper flakes
- Simmer for 5 minutes, then remove lemongrass and pour mixture over the chicken
- Bake at 350° F for 20 minutes, stirring halfway through
Notes
May substitute chicken wings and drummets for the chicken breast.
Serve with jasmine rice, carrots and blue cheese dressing.
