Preheat air fryer to 400° F and over to 350° F
Beat egg in large bowl
Add chicken to egg and coat well
Combine cornstarch, salt, and pepper in a separate bowl
Transfer chicken into cornstarch mixture and coat thoroughly
Place chicken in the air fryer pan, spray generously with avocado oil and airfry for 12 minutes
Let chicken cool and transfer to a 9x13 baking dish
Cut lemongrass lengthwise, transfer to a plastic bag and smash with a rolling pin
In a saucepan over medium heat combine lemongrass orange juice, honey, ginger, soy sauce, and red pepper flakes
Simmer for 5 minutes, then remove lemongrass and pour mixture over the chicken
Bake at 350° F for 20 minutes, stirring halfway through
