Crepes
Serve these with fruit and/or whipped cream.
Ingredients
- 3 eggs
- 1 cup whole wheat pastry flour
- 1 cup whole milk
- 3/4 cup water
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 tbsp butter
- extra butter to use while cooking
Instructions
- Blend all ingredients in a blender or hand mixer thoroughly
- Heat 10-inch frying pan to medium heat. A few drops of water will sizzle and evaporate immediately when the temperature is right
- Melt about 1/2 tsp of the extra butter in the frying pan (add a little more than this to the first pan only)
- Tilt the pan slightly and pour just under 1/4 cup batter on top of the melted butter. Swirl and tilt the pan to create an even layer of batter
- Flip carefully with a spatula after ~1 minute
- Cook for an additional minute and then transfer to a tortilla warmer
- Serve warm with fruit, whipped cream, or glazed bananas
- For faster cooking use two pans simultaneously
