Crepes

Ingredients
  

  • 3 eggs
  • 1 cup whole wheat pastry flour
  • 1 cup whole milk
  • 3/4 cup water
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tbsp butter
  • extra butter to use while cooking

Instructions
 

  • Blend all ingredients in a blender or hand mixer thoroughly
  • Heat 10-inch frying pan to medium heat.  A few drops of water will sizzle and evaporate immediately when the temperature is right
  • Melt about 1/2 tsp of the extra butter in the frying pan (add a little more than this to the first pan only)
  • Tilt the pan slightly and pour just under 1/4 cup batter on top of the melted butter.  Swirl and tilt the pan to create an even layer of batter
  • Flip carefully with a spatula after ~1 minute
  • Cook for an additional minute and then transfer to a tortilla warmer
  • Serve warm with fruit, whipped cream, or glazed bananas
  • For faster cooking use two pans simultaneously
